3 Eggs
2 cups Sugar
1 cup Oil
1 tsp. Vanilla
3 cups Plain Flour
1¼ tsp. Salt
1 tsp. Baking Soda
¼ tsp. Baking Powder
¼ tsp. Cinnamon
2 cups peeled, shredded Zucchini
1 cup Pecans or Walnuts (optional)

Directions:
Directions:
Beat eggs. Add oil, sugar, vanilla, salt, baking soda, cinnamon, and baking powder. Then add zucchini and flour. Add nuts if desired. Mix well.
Bake in 2 greased and floured loaf pans or may use a 9x13 pan.
Bake at 325º for one hour.
