10 Tbs butter, chilled, divided
1 1/4 C flour, divided
1 Tbs sugar
1/2 tsp salt
1/4 C ice water

Grate 2 Tbs butter and place in freezer. Cut remaining 8 Tbs butter into 1/2 inch cubes. Pulse 3/4 C flour, sugar, and salt in food processor until combined, 2 pulses. Add cubed butter and process until paste forms, about 30 seconds. Break paste into 2 inch chunks around processor blade. Add remaining 1/2 C flour and pulse until pieces no larger than 1 inch, 4-5 pulses. Transfer to medium bowl. Add grated butter and toss until butter pieces are coated with flour.

Sprinkle 2 Tbs ice water over mixture. Toss until mixture is evenly moistened. Sprinkle remaining 2 Tbs ice water and toss to combine. Press with spatula until dough sticks together. Transfer to sheet of plastic wrap. Press to form 5 inch disk. Refrigerate 2 hours or up to 2 days. Let sit on counter about 10 minutes before rolling.

Roll dough into 12 inch circle on well-floured counter. Transfer to pie plate pie plate. Trim overhang to 1/2 inch and tuck overhang under, and crimp around edge. Chill 30 minutes until firm. Preheat oven to 350º.

Line shell with aluminum foil and fill with pie weights. Bake 25-30 minutes until edges are set and just beginning to turn golden. Remove foil and weights and continue to bake 10-15 minutes until golden brown and crisp. Cool completely on wire rack, about 30 minutes.
