3 – eggs
1 c. – oil
2½ c. – sugar
2 c. – zucchini, shredded
3 tsp. – vanilla
3 c. – flour
¼ tsp. – baking powder
1 tsp. – salt
1 tsp. – baking soda
3 tsp. – cinnamon
1 c. – chopped nuts

Directions:
Directions:
Beat eggs until light and fluffy. Add sugar oil and vanilla, blend well. Add remaining ingredients blend well, fold in nuts. Grease and flour loaf pans. Bake at 350º for 45 to 60 minutes. Makes 2 loaves.
