For the cake:

¼ C (60g) sourdough discard
2 tbsp milk
2 tbsp melted butter or oil
2 tbsp sugar (white or brown)
¼ C (30g) all-purpose flour
½ tsp baking powder
¼ tsp cinnamon
pinch of salt

For the cinnamon swirl:

1 tbsp melted butter
1 tbsp brown sugar
¼ tsp cinnamon

For the icing:

2 tbsp powdered sugar
½ tsp milk or cream
¼ tsp vanilla extract

Directions:

Mix the cake batter ingredients together - in a microwave safe mug, whisk together sourdough discard, milk, melted butter, and sugar. Stir in the flour, baking powder cinnamon, and salt until smooth.

Create the cinnamon swirl - in a small bowl, mix melted butter, brown sugar, and cinnamon. Drizzle over the batter and swirl it in with a toothpick or knife.

Microwave: Cook o high for 60-90 seconds until the cake rises and is set but still slightly soft in the center. Avoid overcooking to keep it from drying out.

Make the icing - mix powdered sugar, milk, and vanilla extract until smooth.

Serve - drizzle icing over the warm cake and enjoy immediately.
