2 tablespoon olive oil

1 large onion, diced

1 cup celery, diced

3 cups diced, smoked ham

3 cloves garlic, minced

2-3 quarts chicken stock, as desired

2 (27 oz.) cans seasoned collard greens, drained

2 (15.5 oz.) cans great northern beans, drained and rinsed

1 (14.5 oz.) can petite diced tomatoes

1 (10 oz.) can Rotel diced tomatoes

1 (14.5 oz.) can diced potatoes, drained

Salt and Pepper, to taste

Directions:
Heat the oil in a large stock pot or dutch oven of medium-high heat. Add the onion and celery and cook until the onion is translucent and the celery begins to soften, about 5 minutes. Add the ham and cook for another 5 minutes, then add the garlic and cook for 1 minute.

Add the chicken stock, then stir in the collard greens, beans, diced tomatoes, and the potatoes, bring to a boil, then reduce to a slow simmer. Add salt and pepper to taste. Cover and cook for 30 to 40 minutes, adding more stock if needed.

Serve with cornbread. Serves 10 - 12
