Ingredients:

3/4 cup sugar
3 TBS cornstarch
1/4 tsp salt
2 cups whole milk
3 egg yolks
2 TBS butter
1 tsp vanilla
1/2 cup coconut

One pie shell, baked

Directions:
Directions:
In saucepan, combine sugar, flour, and salt.
Gradually stir in milk.
Bring to boil over medium heat, stirring continuously.
Cook and stir 2 more minutes.
Remove from heat.
Stir in small amount of hot mixture into yolks.
Immediately return to hot mixture.
Cook 2 more minutes, stirring constantly.
Remove from heat.
Add butter and vanilla and coconut.

Pour in baked and cooled pie shell.
Spread meringue and sprinkle with coconut Bake 350º 12-15 minutes
OR top with Cool Whip after cooling
