Giblets from turkey or chicken (neck, liver, etc)
1 stalk celery, chopped
1 bay leaf
1 onion, chopped
salt & pepper to taste
1/2 cup turkey or chicken broth
1/2 cup flour
3 boiled eggs, chopped fine

Directions:
Directions:
Place giblets in saucepan with celery, bay leaf, onion, salt, pepper and 6 cups water. Bring to boil then reduce heat and simmer, covered, until giblets are tender and meat is falling off the bone. Remove bones and chop meat and giblets fine. Add 1/2 cup broth. Stir in flour slowly. Bring to a boil, stirring constantly. Reduce heat and cook 3 minutes. Remove bay leaf and add eggs. Serve with dressing or mashed potatoes.

This is paired best with my chicken and dressing recipe. I am the 6th generation to make this recipe and it originated on my mother's side. This gravy brings back many fond memories of sitting in my Mama's kitchen while she cooked.
