Ingredients: 4 cups flour ½ cup corn starch 2 TBSP baking powder 2 TBSP seasoning salt ( like Lowry) 2 tsp pepper optional ½ tsp salt 2 very large ( 1 lb each) sweet onions Large grocery size paper bags doubled up
1 cup buttermilk in large bowl
3 quarts oil such as peanut oil

Directions: |
Directions:Slice onions into ½ inch thick rings. Any rings that are less than 1½ -2 inches set aside to use in another recipe. Separate rings completely.
Whisk the dry ingredients together and pour into a doubled up large size paper grocery bag. A large bowl will solidified but the paper bag makes clean up easy.Add Add about ⅓ of the onions at a time to the buttermilk and then place in the flour mixture in the bag. Continue coating the other run a in batches. Close the top and shake to coat onions evenly. Put the the onion rings on a large metal tray and re dunk and re-coat in flour mixture. Dump onion rings flour and all in the tray and all and separate the rings. Heat oil to 375 degrees in medium high heat in a large pot. ( 2 inches deep oil) Dry onion rings ⅓ at a time for 30 seconds then stir gently and dry for 3-5 minutes till golden. Using paper towels ( triple layers) on baking sheet keep warm in oven as you finish batches. |
