Ingredients: 10-12 lbs whole turkey TURKEY RUB 1 stick softened butter 1/4 C olive oil 1 T kosher salt 2 tsp each pepper and paprika 2 T each fresh herbs, Italian parsley, thyme, rosemary and sage VEGETABLES 3-4 carrots 2-3 stalks celery, including tops 2 onions, quartered 1-2 cloves garlic 1-2 apples, quartered canned chicken broth

Directions:FRESH TURKEY: Clean turkey inside and out. Remove all the wrapped giblets inside the turkey. You can use them or discard them. Brine -dissolve 1/2 C salt, 1/4 C sugar in 2 quarts of water. Put turkey in big pot or plastic bag* and pour over brine. Refrigerate for at least 24 hours. Remove and rinse. Dry off and prepare turkey.
FROZEN TURKEY:Defrost in refrigerator! Depending on size, it could take 3-4 days. After it has thawed, follow the directions above.
OVEN ROASTED: Make a paste of the oil, butter, salt, pepper, paprika and herbs. Rub turkey inside and out (underneath the skin and top of skin). Prepare your vegetables and apples. Divide and put some inside of turkey and lay rest in roasting pan. Bake turkey at 450 degrees for 50 minutes. Lower temperature to 300 degrees. Baste with chicken broth occasionally. Loosely cover turkey with tin foil. For a 12-14 lb turkey, bake for about 3 to 3 1/2 hours or until the internal temperature in thickest part of thigh reaches 165 degrees. Let rest on platter at least 30 minutes before slicing while you are making gravy from the pan drippings. GRILLED TURKEY: Prepare as above and put the turkey into two tin foil pans (stack on top on each other). Add 2 cups chicken broth and vegetables. Grill turkey (10-12 lb) over indirect low heat with the lid closed for 2 1/2 to 4 hours. (325 degrees - 400 degrees). Check occasionally to see if there is still liquid in pan. Add broth as necessary and continue cooking until temperature reaches 165 degrees. If your grill is hot you may need to lower the temperature. Remove to a carving board and let rest.
TO HICKORY SMOKE: Soak chips in water before add the smoking box. You may want to remove them after about an hour to finish cooking the turkey.
