12 oz boneless chicken
Vegetable oil spray
1 medium onion, chopped
1 medium green pepper
1 medium red pepper
1/2 cup celery
3 garlic minced
2-14oz cans tomatoes
1 cup quick cooking brown rice
1 tsp dried thyme
1 tsp black pepper
1/4 tsp salt
1/4 tsp red pepper flakes
Add shrimp or other seafood at the end. Cut into bite-size pieces and set aside

Spray pan and put over medium heat.
Add onion, peppers, celery, and garlic. Cook until tender (7 minutes)
Stir in tomatoes and liquid, rice, thyme, pepper, and salt. Stir in chicken and bring to high heat
Reduce heat, cover, and simmer for 15 minutes or until the chicken is done, the rice is tender, and the liquid is absorbed
Add shrimp and cook until red or done
Cook for 45 minutes
