4 cups flour
4 tsp. baking soda
4 tsp. cinamon
1 tsp. salt
1 3/4 cups vegetable oil
2 1/2 cups sugar
4 tsp. vanilla
6 eggs, beaten
4 cups mashed mangoes (6 fresh or may use
2 pkgs. Trader Jo's frozen mangoes)
1 cup nuts or coconut (optional)

Directions:

Sift together flour, baking soda, cinnamon and salt.

Add oil, sugar, vanilla, eggs, and mangoes.

Bake at 350 degrees for 1 hour (large loaf) or less for smaller loaves.
