1 c. flour
1/2 tsp. salt
1/4 c. EVOO or veg oil
1/4 c. ice water, or very cold water

Directions:
Directions:
1. Mix flour and salt with a fork until salt is incorporated
2. Beat oil and water with a fork until thickened and no longer transparent
3. Pour the oil and water into the flour mixture and mix until all the flour is incorporated. This doesn't take long and becomes shiny
4. Press into a 9" pie plate
5. Fill with any quiche filling you like and bake at 400º until the quiche is done.

This recipe is a great way to avoid frozen pie crusts. While those are easy to use, you can make this crust, fill it, and bake the quiche in less time than it takes for the frozen pie crusts to defrost, fill, and bake. This is a great tasty, fast, and easy mid-week meal.
