3 ½ pounds of onions peeled and finely sliced.
Ground chili pepper flakes
Black pepper
Garlic granules
Knob of butter
1 finely chopped chili seeds and all
12 oz granulated sugar

Place the onions in pot with a glug of olive oil, slowly reduce in size it takes about an hour.

Then add in some chili pepper flakes, some black pepper, some garlic granules. Stirring occasionally.

Once it turns brown add big knob of butter and add in 12 oz granulated sugar, it should begin to thicken. Add in a finely chopped chili seeds and all continue to stir. Turn up the heat. Do not let it burn, keep stirring the bottom of the pot. Add in some white wine let the alcohol burn off. Place in jars to cool off. It pairs nicely with crackers spread with cheese.
