- 1-2 lbs chicken breast
- 2 heads of garlic
- 1 onion
- 2 bay leaves
- S/P to taste
- 8 tomatillos
- 3 jalapeños
- cilantro
- 1 block of cream cheese
- 1/3 C sour cream
- 2 tsp chicken bouillon
- 1 block Queso Fresco for melting (or Oaxaca)
- Cotija cheese for topping
- corn tortillas

Directions:
Boil chicken breast, 1 garlic head, half an onion, and 2 bay leaves with salt in water until cooked through. (You can sear chicken first prior to boiling if you’d like). Once chicken is done cooking remove and shred.

-while chicken is cooking boil the tomatillos and jalapeños. Once soft, remove and place in blender. Blend with cilantro, 3 garlic cloves, 1 piece of an onion (quarter), block of cream cheese, sour cream, and chicken bouillon.

- fry each side of tortilla in oil for a few seconds on each side then remove and fill with shredded chicken and Oaxaca cheese, then roll up.

- pour half the sauce into a deep pan and place rolled enchiladas on top. Pour over remaining sauce and top with extra cheese. Cover with lid and allow to cook/melt cheese. Once cheese is melted top with extra cilantro and cotija cheese and enjoy!
