4 oz self raising flour
2 oz sugar
2 oz margarine
1 egg
1 sliced apple

Directions:

Rub the fat into the flour and then add the sugar and mix together. Then make a well in the mixture.

Beat the egg and pour it into the well. Mix until it is a dropping consistency. Add a little milk if needed to get the right consistency.

Peel, core and dice the apple. Then stir the diced apple through the mixture.

Place it all in an ovenproof dish and bake for 25-30 minutes at 400 ºF / 200 ºC.

Serve with custard, cream or even just milk.

This is a variation of the apple sponge recipe. Growing up in the 1950’s and 60’s we usually had a pudding every day. This was a family favourite - particularly in the autumn when apples were plentiful.
