4 oz self raising flour
2 oz sugar
2 oz margarine
1 egg
1 sliced apple

Directions:

Rub the fat into the flour and then add the sugar and mix together.

Make a well in the mixture and pour in beaten egg. Mix until it is a dropping consistency. Add a little milk if needed to get the right consistency.

Peel, core and slice the apple. Put apple slices in an ovenproof dish and cover with the sponge mixture.

Bake for 30 minutes at 400 ºF / 200 ºC.

Serve with custard or cream.

When my parents lived at Kingsmoor Lodge in Harlow there were several apple trees in the garden so we always spent September harvesting and preserving apples. This in turn led to many apple desserts during the following winter.
