1 lb dried black beans
1 Tbsp oil
1/2 cup of diced onion
2 cloves of garlic (chopped)
1 chopped green or red pepper
1/2 cup chopped celery
1/2 cup fresh ciliantro
salt and pepper

Directions:
Directions:
1. Cover beans with water and soak overnight.

2. Cook with at least 7 cups of water for 3 hours.

3. Add more water if needed.

4. When almost soft add 1 Tbsp cooking oil, 1/2 cup of diced onion, 2 cloves of garlic chopped, 1 chopped green or red pepper, 1/2 cup celery, 1/2 cup fresh ciliantro, salt and pepper.

Recommendations for serving:

Add fresh lemon juice, Tabasco, sour cream, chives, or add one or two eggs, cook for another 2-3 minutes, serve with flour or corn tortillas.
