2 Filets of fresh fish (ie. Grouper/Flounder/Tilaipia/Snapper)
S+P
1/4 tsp paprika
1/4 cup flour
1 tbsp olive oil
1 tbsp butter

Sauce
1 shallot (diced)
1/2 cup white wine
1 lemon (juice & rind)
S+P
1 tbsp butter
1 tbsp capers

Garnish
fresh parsley
lemon juice

Directions:
Directions:
In a saute pan add the olive oil & butter over med heat.
Dry the filets and season both sides with S+P and paprika.
Dredge in the flour and shake off excess.

Saute the fish ~ 2 mins a side (gently flipping) then remove & set aside.

In the same pan add a tiny more oil & butter if dry and saute the shallots for 1 min (just to soften a bit.)
Add the wine & lemon juice/rind bring to a soft boil and cook till reduced to ~ 1/3 cup.
Lower the heat to simmer and add the last tbsp butter & the capers and gently whisk.
Return the filets to the pan for 1 min to heat through.

Plate, top with the pan sauce and garnish with fresh parsley. and finally a little more fresh lemon juice.
