Ingredients: 1 package angel food cake mix 1 pint ice cream for tunnel 2 pints ice cream for frosting 2 cup crushed or chopped candies
(recipe suggested peppermint ice cream of tunnel and chocolate ice cream for frosting; cake was topped with crushed peppermint candies)

Directions:Prepare angel food cake following package directions. Bake; cool. Hollow out cake by cutting deep circle around top of cake about 3/4 inch from side. Cut a second circle 3/4 inch from center hole. Cut ring into sections and remove with fork leaving bottom of cake intact. Set ring aside.
Fill with ice cream flavor chosen for tunnel. Cut small slices from ring and fit over tunnel ice cream to make a smooth top. Place cake in freezer while making frosting.
Frosting: Beat 2 quarts of ice cream flavor chosen for frosting just until soft enough to spread. Working quickly, frost cake all over. Sprinkle with candy. Freeze at least four hours or overnight. When ready to serve, cut into wedges using a serrated knife and a sawing motion. |
