1 1/2 cup baking mix (such as Bisquick)
1/2 cup sugar
1/2 cup milk
2 T butter
1 tsp vanilla
1 egg

Topping:
1/2 cup coconut
1/3 cup brown sugar
1/4 cup chopped nuts
3 T butter
2 T milk

Chocolate or butterscotch chips, if desired

Directions:
Directions:
Heat oven to 350 degrees. Grease and flour a 9 inch round or 8 inch square pan. In large bowl, mix baking mix, sugar, milk, butter, vanilla and egg. Beat on high speed 4 minutes. Pour into prepared pan.

Bake 30-35 minutes or until toothpick comes out clean; cool slightly.

In small bowl, mix coconut, brown sugar, nuts, butter and milk. Spread topping over cake. Set oven control to broil. Broil about 3 inches from heat for approximately 3 minutes or until golden brown.

Add a handful of chocolate or butterscotch chops to the topping if desired.
