1 1/2 pounds plum tomatoes, quarter lenghtwise
5 T olive oil
1 pound package frozen or fresh tortellini or ravioli
1 pound green beans, halved
3/4 pound smoked mozzarella, cut into 1/2 inch cubes
1/3 cup chopped fresh parsley

Directions:
Directions:
Preheat oven to 500 degrees. Place tomatoes, cut side up on a parchment-lined baking sheet, drizzle with 2 T olive oil and season with salt and pepper. Roast until tender, about 20 minutes. Transfer the tomatoes and all of the juices to a large bowl.

Meanwhile bring a large pot of water to a boil and cook tortellini or ravioli per package directions; adding the green beans during the last 3 minutes of cooking; drain. Toss together the cooked pasta, tomatoes, cubed cheese, parsley and remaining 2 T olive oil.

Can roast garlic with tomatoes during last 5-7 minutes or add garlic powder to salt and pepper seasoning.
