3 eggs
1 tsp. baking soda
1 cup oil
1/2 tsp. baking powder
2 cups sugar
1 tsp. salt
2 cups peeled, grated zucchini
3 tsp. cinnamon
3 cups flour
1/2 cup chopped nuts (optional)

Directions:
Directions:
Beat eggs until light and foamy. Add oil, vanilla, sugar and beat well: stir in zucchini. Sift together the flour, baking soda, baking powder, salt and cinnamon. Add to egg mixture and mix well. Stir in nuts. Pour into greased and floured loaf pans and bake at 325º for 1 hour or until done. (Test for doneness with toothpick.) Remove from pan at once and cool on wire rack.
