1 stick butter
1 coursely chopped onion
1 T chopped garlic
2 large leeks, white and light greens, sliced and washed
2# yellow potatoes, peeled, washed and cubed
3 sprigs fresh thyme
5-6 C light broth of choice, chicken, veg, turkey etc
1 C cream or milk
1 T lemon juice or vinegar
1 C grated cheddar
Salt and pepper to taste

Garnish
Crispy bacon pieces or extra grated cheddar or chopped chives or green onions

Directions:
Melt butter in heavy pot. Sauté onion and garlic. Add salt and pepper. Until translucent about 5 minutes.

Add and Sauté leeks until tender about 5 minutes.

Add potatoes, thyme and broth. Cook on medium until potatoes are tender.

Blend in portions or immersionate until smooth. Add cream, lemon juice, and cheese. Simmer and siruntil incorporated.

Serve with garnish of choice
