Authentic Irish Colcannon Recipe

Ingredients: 1 1/2 pounds Yukon Gold potatoes. Cut into 1 inch cubes 1 pinch Kosher salt 1/2 head of Green Cabbage 1/2 cup Scallions. Chop white and green parts. 1 stick Salted Butter chut into 4 pieces Salt and Pepper to taste Garnish with chopped Scallion greens if desired.

Directions:Cooking the Potatoes: Fill a large pot of water with enough room to cover the potaotes by 1 inch. Make sure you have room to add the potatoes.Bring to a boil. Add a large pinch of Kosher Salt to the boiling water. Place the potatoes in the boiling water and cook until they are fork tender. Drain and return the potatoes to the pot.
Preparing the Green Cabbage: While potatoes are boiling, bring a second pot of water to boiling for blanching the cabbage. Fill a large mixing bowl with ice water. Place the cabbage into the boiling water for 2-3 minutes, making sure that all leaves are submerged. Remove from boiling water and place immediately into the ice water bath. Allow to sit for 2-3 minute and then place into a food processor. Add the chopped Scallions to a food processor. Pulse Scallions and Cabbage for 10-15 seconds until both form a finely diced mixture.
Making the Calcannon: Add the stick of butter (4 pieces) to the potatoes, mixing together to allow butter to melt. Once the butter is melted, mash the potatoes. Add the scallions and cabbage mixture to the potatoes and stir to fully combine.
Serve hot, with diced scallions for garnish (if desired). |
