3 T vegetable oil
2 lbs boneless chicken breast, chopped or cubed
3-4 T Cajun seasoning, or more to taste
2 lbs smoked sausage
2 lbs medium shrimp, peeled & deceived
3½ c chopped yellow onions
1½ c chopped green bell peppers
1½ c chopped celery
8¼ c chicken stock
2 T tomato paste
2-14oz cans diced tomatoes
1 heaping T chopped garlic
1 bay leaf
2 c chopped green onions
Cooked rice for serving

In a large pot, add oil and bring to a medium heat. Lightly season the chicken with Cajun seasoning. Brown the chicken and set aside. In the same pot, without changing oil, sauté the sausage for 8 min. Once sausage is nice and sticky, remove and set aside. Still leaving rendered fat in pot, sauté the shrimp for 5 min and then remove and set aside. This will lock all the flavor at the bottom of the pot.
Now, add the trinity mixture (chopped vegetables) and the green onions to the pot and sauté for 8 min. Once softened, add the stock, paste, tomatoes and garlic. Bring to a boil. Immediately after boiling point is reached, add in the chicken, sausage and bay leaf. Season with Cajun seasoning to taste. Reduce the heat to a simmer and cook for 25 min, stirring occasionally. Add the shrimp for the last 7 min of cooking. Once the 7 min are up, remove from the heat.
Serve over cooked rice
