3 lbs russet potatoes, washed
4 large eggs
½ white onion, diced
1 c mayonnaise
¼ c mustard
2 t apple cider vinegar
2 t sugar
¼ c sweet pickle relish
1 t kosher salt
½ t ground black pepper
1 t sweet paprika

Directions:
Directions:
Place the eggs in pot with enough water to cover. Bring to boil and let boil 1 min. Take off heat and cover for 20 min. Drain and run cold water on the eggs. When cool enough to handle, peel eggs and chop. While eggs cook, place potatoes in another pot and cover with water. Add a tablespoon of salt to the water and turn on high heat. As the water starts to boil, turn down the heat to simmer. Simmer for about 15-20 min. Drain the pot and let potatoes cool. Peel potatoes with a fork then cut into bite-size pieces. In a large bowl combine the potatoes, onion and hard boiled eggs. In small bowl combine the mayonnaise, mustard, vinegar, sugar, picle relish, salt and pepper until smooth Add the mayo mixture to the potato mixture, stirring and folding until everything is evenly coated. Cover the potato salad and cool in the fridge for 30 min. Top the potato salad with paprika before serving.
