Buffalo Sauce (makes aprox 4 cups)
20oz (2½c) Frank's Original Hot Sauce
4oz (½c) Worcestershire sauce
8oz (1c) melted butter
2oz (6 cloves) chopped garlic
¾oz (3T+1t) Cajun seasoning

Miami Heat Sauce (makes aprox 1¼ cups)
8oz (1c) Frank's Original Hot Sauce
¼oz (3¼t) cayenne pepper
1½oz (2T+2t) Scotch Bonnet sauce
½oz (1½t) chopped jalapeno

Worcestershire Sauce

15 lbs chicken wings
8T + 2t baking soda

Directions:
Directions:
Preferred method: place wings in a single layer on a racks that are over baking pans. Place, uncovered, in refrigerator overnight to remove moisture. Or, dry wings with paper towel.
Toss dried wings with baking soda in a large bowl.
Preheat oven to 350º Place wings in a single layer on baking pans. Bake for 38 min.
Preheat grill to 350º
Coat wings with Buffalo Sauce. Spray with Worcestershire sauce. Grill on a flame for 3 min, flip and repeat with Buffalo sauce & Worcestershire sauce. Grill another 3 min.
Coat wings with Miami Heat Sauce, spray with Worcestershire sauce. Grill 3 min. Flip and brush with sauce and spray with Worcestershire sauce and grill 3 min again. Remove from heat.
