Buffalo Chicken Wings Recipe

4 lbs chicken wings
5 t baking powder
¾ t kosher salt

For sauce
4 T unsalted butter
½ c Frank's original hot sauce
1 T brown sugar
¼ t kosher salt

Directions:
Preferred method is to dry wings overnight in fridge- lay a rack on a baking tray. Place wings on rack and put in fridge overnight- otherwise pat dry wings with paper towels.
Preheat oven to 250º Put oven racks in lower quarter of oven and top quarter of oven. Line a baking tray with foil. Place a rack inside and brush with olive oil.
Place wings in large bowl. Sprinkle with baking powder and salt. Toss well. Place wings skin side up on rack. Bake on lower oven rack for 30 min.
Move tray to upper oven rack and turn heat to 425º Bake for 40-50 min rotating tray ½ way through until dark golden.
While wings bake, make Buffalo sauce. In large measuring cup, melt butter in microwave. Whisk in brown sugar and Buffalo sauce until sugar is dissolved. Toss wings in warmed sauce. Serve immediately
