½ c. all purpose flour
½ c. evoo
1 lb. skinless red snapper fillets, sliced into 1 x 3" pieces
2 tsp. kosher salt
⅛ tsp. black pepper
¾ c. white vinegar or white wine vinegar
½ medium onion, thinly sliced
½ c. roughly chopped cilantro

Directions:

Heat about ½" of olive oil in a medium skillet on medium-high heat.

Season fish with salt and pepper, both sides. Dredge in flour and shake off excess.

Fry fish, turning once, until cooked through and golden brown (about 2 minutes per side). Do not overcrowd the skillet.

Transfer fish to a plate with paper towels to drain.

Put vinegar, olive oil, onion, and cilantro in a deep bowl. Stir well to combine. Add pieces of fried fish to the bowl, making sure they are submerged.

Cover the bowl with plastic wrap. Allow to marinate for 2 hours at room temperature, or 8 hours in refrigerator.

Serve at room temperature.
