Cauliflower Poutine Recipe

2 heads cauliflower, cut into florets
2 Tb. olive oil
salt & pepper to taste
8 oz. shredded mozzarella cheese


Gravy:
2 Tb. butter
2 cloves garlic, minced
3 Tb. flour
2 c. veggie stock
1 Tb. Tamari sauce
¼ c. grated Parmesan cheese
salt & pepper to taste

Directions:
Preheat oven to 425º. Spread the cauliflower on a baking sheet. Drizzle with oil. Season with salt & pepper. Bake until tender and crisped, about 30 minutes. Remove from oven (do not turn off heat).

Prepare gravy: Add butter to a saucepan and melt over medium heat. Add garlic. Stir until soft and fragrant, but not browned. Add flour. Stir to form paste. Continue stirring over medium heat until golden. Slowly add stock, whisking as you pour. Raise heat; continue to whisk until mixture comes to a boil.

Reduce heat to a simmer. Add Tamari and Parmesan, whisking until mixture is smooth and thickened. Season to taste with salt & pepper.

Pour gravy over cauliflower. Top with mozzarella and return to the oven. Bake until cheese is bubbly, about 5 minutes.
