8-10 cups of water with 4 bouillon cubes dissolved or 3 cans beef broth
1 large onion chopped
1½ cup chopped celery
1½ cups chopped carrots
1 bay leaf
1 pound lean hamburger for the meat balls
½ cup dry breadcrumbs
2 tsp parsley
¾ tsp salt
½ tsp pepper
1 tbsp Maggi
1 tbsp Worcestershire sauce
1 500 ml tin of crushed tomatoes or 500 ml tomato juice
1 cup soup noodles

Directions:
Directions:
Bring water to boil and dissolve bouillon cubes
Chop the onions, celery and carrots, and sauté in 1-2 tbsp butter
Bring beef broth to a boil, add bay leaf, sautéed vegetables and simmer 30 minutes
Mix hamburger with dry breadcrumbs, parsley, salt, and pepper
Form into small 1 inch balls and brown in fry pan or oven
Add meatballs to soup and simmer 15 min or til cooked inside
Add 500 ml tin of tomatoes or tomato juice
Add 1tbsp Maggi to taste
Add 1 tbsp Worcestershire sauce to taste
When soup is boiling add 1 cup soup noodles and simmer 10 min

You may reduce the amount of tomatoes according to taste. This is a slightly revised version of Grandmas recipe as she always made her broth from a soup bone. You can still do that but good soup bones are not always available. Don’t forget the bay leaf or the maggi.
