Salad:

4 Cups Butter lettuce
2 Cups Baby Spinach
¼. Cup of Cilantro or Arugula
2. Cups Roasted Chicken
2. Cups of slighly blanched asparagus
½. Shredded carrots (optional)
¼. Alfalfa sprouts (optional)

Curried Mayonnaise Dressing

4 tablespoons mayonnaise
4 tablespoons olive oil
2 tablespoons fresh lemon juice
2 teaspoons honey
1 teaspoon curry
1 teaspoon dried Basil or 4 teaspoons of fresh Basil
2 teaspoons of scallions, minced
½ teaspoon salt
Fresh ground pepper

Directions:
Directions:
Prepare the Salad:

Wash, spin, all greens.

Slice asparagus diagonally into 1 inch pieces, discarding tough ends. Boil 3-4 minutes than chill in ice bath for 5 minutes. Drain well and toss into greens.

Add chopped chicken


Prepare Dressing:

Wish all dressing ingredients together

Pour dressing over salad, toss and serve

This is Don and my favorite salad. It came out of Fit for Life book from the 70’s. I have been making it just as long. if you think you don’t like curry, which Don doesn’t, but he really likes this dressing and I think you will too.
