1 large shallot
2-8 oz jars of sun-dried tomatoes
2 lbs ground turkey or chicken
1 cup dry white wine (Pinot Grigio or Chardonnay), optional
2 T minced garlic
6 cups of chicken stock
1 block of garlic and herb Boursin cheese
1 cup heavy cream
2-3 cups kale or baby spinach
3 T cornstarch
3 T water
1 cup finely grated Parmesan cheese

Finely dice shallot. Using the oil from the sun-dried tomatoes in a large saucepan, saute the shallot and ground meat until cooked through. Add garlic, continue sauteing for a few minutes, then add white wine. Chop sun-dried tomatoes and add to the mixture. Add chicken stock, Boursin cheese, and heavy cream, and bring to a light boil. Season to taste with SPG. Mix 3 T of cornstarch with 3 T of cold water in a small dish. Add the mixture to the soup. Simmer until the soup thickens. Once thickened, add Parmesan cheese and kale/spinach and simmer for an additional 5-10 minutes until greens are tender.

You can eliminate the wine, just add the same amount of stock to replace it.
