4 lamb kidneys, cut into small pieces
3 slices bacon
1/2 onion, chopped
1 Tbsp. flour
1/2 cup water
1 tsp. salt
1 Tbsp. worcestershire sauce (lea & perrins)
small amount of pepper
1 bay leaf
white wine (just because you can)

Directions:
Directions:
Cook bacon in medium frying pan. Drain bacon on paper towels leaving fat in pan. Sauté onion until soft. Add the kidneys and brown lightly over medium heat in bacon fat and onion. Add 1/2 cup water, wine and bay leaf, simmer over low heat. Make mixture of flour and 1/4 cup water, adding slowly while stirring into simmering kidneys. Continue to simmer and stir in salt, pepper and Worcestershire sauce. If gravy thickens too much add water as needed.

Serve on toast with bacon crumbles over top.
