225g (½ lb.) cooked, and drained
100 g (4 oz.) sharp white cheddar cheese, grated
2 tbsp. butter
2 eggs beaten
1 medium ripe tomato coarsely chopped
1 small sweet onion chopped or less to taste
1 cup homo milk
salt to taste

Butter a baking dish. Combine all ingredients except butter together and place in casserole. Dot with butter and top with a little more cheese. Bake in a moderate (325 º F) oven for about 1 hour

In Barbados the cheese of choice is New Zealand Cheddar
Bajans use long straight macaroni not elbow macaroni
Many recipes also include dry mustard, catchup, powdered thyme and hot sauce
