4 cups large flake oats
1 1/2 nuts chopped into bite size pieces
(A good mix is 1/2 cup pumpkin seeds, 1 cup pecans)
1 tsp cinnamon
3/4 tsp salt
1/2 cup coconut or olive oil
1/2 cup honey or maple syrup
1 tsp vanilla extract

1/2 cup coconut
1/2-1 cup cranberries or raisins

Directions:

Preheat oven to 350 degrees.
Combine oats, cinnamon, salt and nuts. Melt coconut oil and honey (if using), add vanilla and combine with oat mixture.
Cover large cookie sheet with parchment paper and spread granola over it evenly. Bake for 10 min, take out to stir in coconut. Bake again for 10 more minutes, stirring once at five minutes.

Let granola cool completely, then add cranberries or raisins. Store in air tight container or freeze for freshness.
