1 stick of butter or margarine, room temperature
1/2 cup vegetable oil
2 cups self-rising flour
2 cups sugar
1 cup buttermilk
1 cup flaked coconut
1 cup creamy peanutbutter
5 eggs, seperated
1/2 cup chopped peanuts (optional)

Directions:

Pre-heat oven to 350º.
Grease (3) 9" round cake pans
Cream together butter, oil, flour, sugar, buttermilk, coconut, peanut butter and egg yolks. Beat with electric mixer for 2 minutes until well blended.
Beat egg whites in small bowl until stiff. Fold egg whites into batter. Divide mixture into 3 cake pans and bake about 25 minutes.
