4 ½-inch pork chops
1 tablespoon fat
1½ teaspoons salt
1 teaspoon chili powder
1 teaspoon monosodium glutamate (optional)
Dash of pepper
¾ cup converted or long-grain rice
½ cup chopped onion
1 No. 2 can (2½ cups) tomato juice
¼ cup chopped green pepper

1. Prepare the pork chops:
•. Brown the pork chops slowly in hot fat over medium heat.
•. Once browned, drain off excess fat.
2. Season the chops:
•. Combine the salt, chili powder, monosodium glutamate (if using), and pepper.
•. Sprinkle the seasoning mixture evenly over the pork chops.
3. Add the rice and vegetables:
•. Stir in the rice and chopped onion around the pork chops in the skillet.
•. Pour the tomato juice over everything.
4. Cook:
•. Cover the skillet and cook over low heat for about 35 minutes, stirring occasionally to prevent sticking.
5. Add the green pepper:
•. After 35 minutes, add the chopped green pepper.
•. Continue cooking for an additional 10 minutes, or until the rice and pork chops are tender and fully cooked.
6. Adjust moisture if necessary:
•. If the mixture becomes too dry during cooking, add a small amount of water or tomato juice in the last few minutes.
7. Serve:
•. Serve the pork chops with the rice mixture on the side. Garnish with shredded cheese if desired.
