1 cup whole wheat flour
1tsp. baking powder
1tsp. baking soda
½tsp. salt
1 cup Flax seeds or natural bran
1 cup buttermilk or 1 cup sour milk
⅓ cup cooking oil
½ of a banana or ¼ of apple sauce
1 egg
¼ Splenda sugar
½tsp. vanilla

Directions:

In a large bowl , combine all the dry ingredients. Mix well . Push up around the sides of the bowl making a well in the center.

If using bran , mix with buttermilk and let stand for 5 minutes. If not just add the flax seed to the dry mixture.

Add remining ingredients to bran mixture in order given . Beat until smooth . Pour into the well flour mixture and stir well .

Fill muffin cups to ¾ full.

Bake @ 375ºf for 20 to 25 miutes.
