3/4 c sugar
3 Tbsp cornstarch
2 Tbsp cocoa powder
1 tsp espresso powder
1/2 tsp coarse kosher salt
2 lg egg yolks
3 1/2 c whole milk
6 oz unsalted butter
1 tsp vanilla extract

Directions:
Directions:
1. In med pot whisk together sugar, cornstarch, cocoa powder, espresso powder and salt. whisk in egg yolks and about 1/3 of the milk until smooth. Whisk remaining milk, the stir in chopped chocolate

2. Turn heat to med. Cook mixture, whisking constantly and occasionally using a rubber spatula to scrape up any thickened pudding in the edges of the pan, until the pudding ahs fully thickened and large bubbles are forming and popping, about 8 min.

3. Remove from heat and immediately pour the pudding through a fine mesh strainer into a bowl, using a spatula to push all the pudding through the strainer. Whisk in butter and vanilla into the pudding until fully combined.

4. Leave the pudding in the bowl or transfer to individual serving containers and smooth over the top. Place plastic wrap a cool to room temp before chilling in fridge for at least 3 hours or overnight.
