1/2 cup sugar
2 cups rhubarb
1/2 cup sugar
1/2 cup butter
1 egg
2 cups + 2 tbsp flour
1 tsp soda
1 tsp cinnamon
1/2 tsp salt
1 tsp vanilla
1/2 cup raisins
1/2 cup coconut
1 cup buttermilk

Directions:
Directions:
Mix 1/2 cup sugar with 2 cups rhubarb and set aside. Cream 1/2 cup sugar, 1/2 cup butter and 1 egg. Add 2 cups plus 2 tbsp flour, 1 tsp soda, 1 tsp cinnamon, 1/2 tsp salt and 1 tsp vanilla. Then add 1/2 cups raisins and 1/2 cup coconut with 1 cup buttermilk. Mix well and pour in a 9 x 13 pan. Bake at 350 degrees for 45 minutes.
