½ cup Oil, canola or corn
1 pkg Sazón (with coriander and annatto)
8 oz Tomato sauce
⅓ cup Sofrito
1 can Beans, pink or kidney, not drained
1 Tbsp Salt
Pepper, to taste
3 cups Rice, medium grain
1 ¼ to 1 ½ cups Water, hot

Directions:
Directions:
Rinse and drain the rice with hot water.

On medium heat, add the oil and stir in the package of Sazón. Add the tomato sauce and sofrito and continue to stir.

Add all of the remaining ingredients in order. Bring to a boil on high and keep stirring.

Once boiling, turn down to low and cover with a lid. Do not take off the lid until it is time to stir.

After 25 minutes, stir and cover again. After another 25 minutes, stir. If the rice is not soft enough, cook for 10 more minutes with the lid on.

If you continue to have hard pieces of rice, add a little more water or slightly increase heat. You will have crunchy rice in the bottom of the pot–some people like this part!
