1 lb. almond paste (2 c)
2 c granulated sugar
2 egg whites

Directions:

Mix almond paste and sugar thoroughly. Add 2 egg whites. Shape into balls about 1 " in circumference and roll tops into granulated sugar. (Mixture is sticky occasionally wet fingers in water). Use red or green coloring for holidays. Bake on ALUMINUM FOIL at 300º for 20 minutes. DO NOT remove from foil until thoroughly cooled. Makes 40 cookies.
Variations: Roll white ones in pignolia nuts or sliced peanuts. 2, place well drained maraschino cherry on pink ones (use red coloring). 3, Roll green ones in chopped pistachio nuts (use green coloring). 4, add 3 Tbsp cocoa and 1 c chopped toasted almonds to 1 c mixture. Roll in granulated sugar.

Make sure you use Aluminum foil and let cool. They will peel off once cooled.
