* 2 cup grated cheddar or pepper jack cheese
* 1 egg, lightly beaten
* 2–3 fresh jalapeño peppers, finely minced

Combine Dry Ingredients: In a mixing bowl, blend the flour and salt together until evenly mixed.
Incorporate Butter: Add the cubed butter to the flour mixture. Employ either a pastry blender or two forks to cut the butter into the flour until the mixture takes on a crumbly texture.
Add Egg: Fold the lightly beaten egg into the mixture, ensuring it’s just incorporated; avoid overmixing.
Mix in Cheese and Jalapeños: Gently fold in the grated cheese and minced jalapeños until the mixture forms a cohesive dough.
Chill the Dough: Shape the dough into a ball, wrap it in plastic wrap, and refrigerate for at least 1 hour to firm up.
Preheat the Oven: Preheat your oven to 400°F (200°C), getting it ready for baking.
Form the Cookies: Post chilling, roll the dough into 1-inch balls and arrange them on a parchment-lined baking sheet, ensuring they are spaced about 2 inches apart.
Flatten the Dough Balls: Use the bottom of a glass or jar to slightly flatten each dough ball.
Bake: Bake the cookies in the preheated oven for 14-18 minutes, or until the edges are lightly browned.
Cooling: Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
