4-5 pound beef bottom round or rump roast
1 tablespoon olive oil
2 cups beef broth
2 cups ketchup or barbeque sauce
1/2 cup cider vinegar
2 medium onions, chopped
6 tablespoons brown sugar
5 carrots quartered
5 ribs celery

Directions:

1. Rub roast with oil. Brown under broiler on both sides

2. In 4-quart or larger slow cooker, combine broth, ketchup, vinegar, onions, garlic, and sugar. Add roast, carrots, and celery.

3. Cover and cook until meat is fork-tender, on low 8 hours. Slice roast and serve with vegetables and sauce from cooker.
