1 lb. boneless, skinless chicken
8 cups chicken broth
3 bay leaves
4 cloves of garlic
1 chopped onion
salt, pepper, red pepper -or-
Slap Ya Mama cajun seasoning

3 carrots, diced
2 stalks celery, diced
1 cup mushrooms, chopped
2 potatoes, diced
1 cup broccoli - chopped

3/4 cup Rice Blend
(I use Rice Select Royal Blend)

Directions:
Directions:
Add chicken, broth, spices, garlic cloves, and onions to crockpot. Cook on High for 204 hours. Remove chicken and chop or shred. Strain the broth to remove any mushies or yuckies...or not! Return to crockpot with chicken.
Add vegetables, rice, and more chopped onions if desired. Cook on low for at least 2 hours.

Cool new tip from Kami! Cook the rice separate from the soup. Put the warmed rice in each individual bowl and add the hot soup. This keeps the soup from becoming mushy-which is obviously a thing with me in this recipe-hmmmm. It works with noodles too!
