2 Tbsp Hummus
1 Cup Baby Spinach
1/2 Cucumber, diced
1 Tbsp Fresh Mint, chopped
1 Tbsp Fresh Parsley, chopped
1 Tsp Olive Oil
Salt and Pepper to Taste

Lay out tortilla. Spread hummus on tortilla. Add spinach leaves. Sprinkle on cucumber and herbs, drizzle with oil, season with salt and pepper. Roll up and serve.
