2 t Olive oil, divided
1/3 c Green bell pepper, diced
1/3 c Red bell pepper, diced
1/3 c Onion, uncooked, diced
1 1/2 oz. Extra lean low sodium boneless ham, cooked
4 Eggs, large
1 pinch salt
1 pinch pepper

Directions:
Directions:
In a large nonstick skillet, heat 1 T oil over medium heat. When oil shimmers, add peppers and onion. Cook, stirring occasionally, until softened and lightly browned, 3 - 5 minutes.
Add ham; cook, stirring a few times, until heated through 1 - 2 minutes.
Make an omelette using 2 eggs, 1/2 t oil and a pinch each of salt and pepper. Top with half of omelette filling; fold over.
