1 Tbsp. smoked paprika
1 Tbsp. regular paprika
1½ tsps. dried oregano
1 Tbsp. kosher salt
1½ tsps. ground black pepper
1½ tsp. dried thyme
2 tsps. onion powder
2 tsps .garlic powder
½ to 1tsp. cayenne pepper

4-6 oz. chicken breasts

Combine spices together well. Slice cutlet in half then cut thick part into 2 thin parts.
Put cutlets between plastic wrap and pound thin. Coat with spices on both sides. Using cast iron pan add 1 tsp oil to pan and heat till just starting to smoke. Cooking on high heat add 2 Tbsps. butter and melt. Add cutlets to cover bottom of pan covering most of the surface area and leave undisturbed for 2 minutes then flip over. Cook 1 minute on other side. Transfer to wire rack. Clean pan before cooking next batch.
