215 grams finely ground, blanched almond flour (2 1/4 cups)
230 grams granulated sugar (1 cup, plus 2 tablespoons)
15 grams Dutch processed cocoa powder (3 level tablespoons)
pinch of salt
3 egg whites
1 teaspoon almond extract
1 cup powdered sugar for rolling cookies

Directions:

Preheat oven to 350º.
Line baking sheet with parchment paper.
Whisk together the almond flour, sugar, cocoa powder and salt in large bowl.
In a separate bowl, beat the egg whites until medium to firm peaks.
Add the almond extract to egg whites and gently combine.
Fold the egg whites into the flour mixture until it forms a universal sticky dough.
Using a tablespoon, scoop the mixture and roll in the powdered sugar to form a ball.
Place the balls about 1 1/2 inches apart on the baking sheet.
Bake for 15 minutes or until tops are firm to the touch.

I use a food scale to measure ingredients as it is more accurate, especially for almond flour.

I like to weigh each ball before rolling in powder sugar for uniformity.

Swap out the almond extract for vanilla for a different taste.
